In aqueous solution, its phospholipids can form either liposomes, bilayer sheets, micelles, or lamellar structures, depending on hydration and temperature. It has low solubility in water, but is an excellent emulsifier. It is usually available from sources such as soybeans, eggs, milk, marine sources, rapeseed, cottonseed, and sunflower. Lecithin can easily be extracted chemically using solvents such as hexane, ethanol, acetone, petroleum ether, benzene, etc., or extraction can be done mechanically. Gobley originally isolated lecithin from egg yolk-λέκιθος lekithos is "egg yolk" in Ancient Greek-and established the complete chemical formula of phosphatidylcholine in 1874 in between, he had demonstrated the presence of lecithin in a variety of biological matters, including venous blood, in human lungs, bile, human brain tissue, fish eggs, fish roe, and chicken and sheep brain. In 1850, he named the phosphatidylcholine lécithine. In just a few minutes, that outer candy shell hardens.Lecithin: Lecithin -UK:, US:, from the Greek lekithos, "egg yolk"- is a generic term to designate any group of yellow-brownish fatty substances occurring in animal and plant tissues, which are amphiphilic – they attract both water and fatty substances -and so are both hydrophilic and lipophilic-, and are used for smoothing food textures, dissolving powders -emulsifying-, homogenizing liquid mixtures, and repelling sticking materials.Lecithins are mixtures of glycerophospholipids including phosphatidylcholine, phosphatidylethanolamine, phosphatidylinositol, phosphatidylserine, and phosphatidic acid.Lecithin was first isolated in 1845 by the French chemist and pharmacist Theodore Gobley. I melted the white chocolate candy coating according to package instructions & began taking them for a dip! And these little runts are just too cute!!Īfter all 83 ((or so - but who’s counting?)) balls are formed, I refrigerated them for 15 minutes to ensure they held their shape. Sure, it made the process a bit longer than if I had used a tablespoon, but I ABSOLUTELY love this size!! They are a perfect two-bite treat. I decided to make these treats teenie by using a teaspoon measuring spoon. ![]() I am here to tell you – this cookie ((ball)) doesn’t crumble. More important than the prefect shape – the ball needs to keep its shape while being dipped. I tested out ratios of these three ingredients and landed on just the right texture! By using the entire package of cookies, 1/3 cup of cookie butter and the entire 8 ounce package of cream cheese, the most perfect ball can be formed. Cream cheese is a key component, adding some necessary tang to this otherwise sweet treat.īlend these three ingredients in a food processor and let the magic happen. I would imagine the full fat would work just as good. I used 1/3 less fat cream cheese because it is all I had on hand. Oh, and you may want to pick up a few pairs of stretchy pants while you are at it.Ĭream cheese is the last ingredient for the inside of this ball. Life as you know it will be forever changed. I mean – cookie butter makes everything better! If you haven’t introduced yourself to cookie butter, you must stop everything you are doing and run ((fast)) to the grocery store. I also used several tablespoons of cookie butter, just because. But, of course, you can use any sandwich cookie you prefer. I chose the simple vanilla sandwich cookies ((specifically Vienna Fingers by Keebler)) because I think they do the best job of letting the cookie butter flavor shine through. Hubby had to bag them up or else we would have none for our upcoming Super Bowl part-ay!Īlthough, these were SO easy ((and therapeutic - think kindergarten & play dough)) to make, I may just have to make another batch tomorrow! ![]() The ingredient list is short & the creation process is so simple – but the taste? It is an eye-bulging wow!! This batch yielded 82 teenie wonders – after 3 hours we are officially in the 40’s. Trust me – I am buying into the lie, but my pants seem to disagree. ![]() That is right, I used the words “cookie butter” and “guilt-free” in the same paragraph. Teenie being a code word for “eat by the dozens guilt-free”. I made “teenie” cookie butter cookie balls. ![]()
